The Kitchen: Going Meatless?

 
After watching our latest "cerebral documentary" on netflix, Forks over Knives, I decided to try a meatless dinner.  I'll try to review the documentary soon, but the general flavor is to incorporate more vegetable protein in your diet than animal protein.  Don't get me wrong, I am a steak-loving Texan through and through-- but I don't think that every single meal we eat has to have meat in it. 

My husband, however, differs in opinion.  This brings me to last night's dinner....  I cooked some whole grain brown rice with my homemade chicken stock, sauteed lots of onions and bell peppers (with a hint of coconut oil-- which smelled heavenly!), heated a can of organic black beans, and mixed a large avocado with the juice from a fresh lime.  Throw this in a bowl with a sprinkle of cheese, and voila meatless burrito bowls!






Our girls loved them and ate a huge dinner-- even asking for seconds!

I didn't tell Dave we were going meatless, and halfway through dinner this was our conversation:

      Dave: "I see you are implementing our latest documentary." 
      Me: "Yes, isn't it delicious?  I can taste the hint of lime and coconut oil.  Mmmm."
      Dave: "It is good.  I just keep thinking how it would be really good with some chicken or steak."

So dear readers, I am not yet sure if our family will be going meatless a couple nights a week. 

What do you think?  Does it still seem like a meal to you if you didn't have meat?  What is your favorite vegetarian meal?

  1. Our house underwent a meatless revolution about 11 months, as per Jason request. Going meatless several nights a week or only eating meat after 5pm (it's a long story). And the comment at our house after reading your latest post:

    Jason: "I'm going to have to give that guy a call."

    Our favorite meal: Quinoa stuffed peppers. YUM!

    Cut peppers in half. Place cut side down in a baking dish filled 1/4inch with water and bake for 15min at 350º. (Handy as this is how long it takes the Quinoa to cook. Makes for a quick meal.) Meanwhile saute shredded carrots with olive oil, salt, pepper, and cumin. Mix in black beans, diced tomatoes (canned or fresh, depending on what I have), chopped peppers, corn, and anything else really (nice way to use up veggies before they go bad). Mixed with Quinoa and cheese. Stuff cooked peppers and sprinkle a little more cheese on top and put back in oven until cheese is melted. Serve with salad or steamed zucchini. ENJOY!

  3. Tht Gberts love BFD (breakfast for dinner) - eggs, potatoes, tomatoes, and jalapenos. And, thai veggie night - rice noodles, zucchini, squash, ginger, lite coconut milk, curry. It's so flavorful that you won't miss the meat (Dave might, though!).
